Irish Soda Bread on the Green Mountain Grill!

As you know, I am a massive fan of cooking everything outdoors. Smoked meats, grilling and cooking pizzas and baking are all possible for anyone with a grill or smoker. Here I have made a traditional Irish Soda Bread right on my Green Mountain! I added a stone, but you could use a small baking sheet. Super simple, just four ingredients and all done in under 90 minutes. Have a look at the recipe and video below

Ingredients:

  • 425 grams of King Arthur All Purpose Flour
  • 7 grams of salt
  • 6 grams of baking soda
  • 510 grams of Low-fat Buttermilk
  • Note: If you do not have Buttermilk, add 2 tablespoons of lemon juice to 510 grams of low-fat milk, mix well and wait 5 minutes. Then you can use this in place of buttermilk!

Directions

  • Preheat your GMG (or oven) to 450 degrees with a baking / pizza stone
  • Whisk together all the dry ingredients
  • Fold in the buttermilk with a stiff spatula and mix until there are no pockets of flour. Do not over mix.
  • Prepare a pizza peel or similar with cornmeal
  • Using plenty of flour, gently remove the bread mixture from the bowl and place on the peel
  • Quickly transfer to the pre-heated GMG or oven
  • Bake 45 minutes, until 200-210 degree internal temp
  • Let rest on a wire rack for 30 minutes
  • Slice and serve
