Simple Chicken Breast on the Green Mountain Grills Jim Bowie

Very simple go-to recipe we do weekly at our home.  Grills quickly, just like it would over a gas grill, but you get a wonderful wood fired flavor from the pellets.  Hope you enjoy!

Ingredients:

Directions:

  • Flatten each chicken breast by placing, one at a time, in a 1 gallon zip lock bag and pounding them out flat.  This will allow for more even cooking.
  • Arrange the chicken breasts tops down and season liberally
  • Lightly spray each chicken breast with olive oil, to set the rub and prevent sticking
  • Flip each chicken breast and repeat seasoning and spray with olive oil
  • Refrigerate 1 hour
  • Prepare a Green Mountain Grill cooker for 450 degree cooking
  • Cook the chicken breasts 15 minutes, per side
  • Once the chicken breasts reach 160 degrees internal temperature, sauce the tops liberally
  • Cook another 5 minutes to set the sauce
  • Rest the chicken for 5 minutes, serve and enjoy!
