California Chicken Breast On Green Mountain Grills

A simple, but very delicious recipe to liven up any plain ol’ chicken breast!

Ingredients

  • (4) 8oz Chicken Breasts
  • (4) slices of Provolone or Mozzarella cheese
  • (1) Haas Avocado, gently sliced 1/4″ thick
  • (1) Can of Cento San Marzano Tomatoes
  • Balsamic vinaigrette for drizzle
  • Salt, pepper, garlic powder

Directions:

  • Pound chicken breasts flat, for even cooking. I use a zip lock bag to contain juices from splashing and then gently hit the meat with my fist until flat. Try to get all 4 of them equal thickness
  • Season all evenly with salt, pepper and garlic powder to your liking.
  • Set the GMG to 500 Degrees, using Grill Grates.
  • Once heated up (about 30 min), add the chicken breasts to the GMG
  • Grill one side for 8 minutes, then turn 180 Degrees and grill for another 8 min.
  • Repeat on the other side, until breasts reach 160 Degrees internal temp.
  • Top each breast with cheese, an avocado slice and a San Marzano tomato.
  • Once cheese is melted, drizzle balsamic vinaigrette to taste.
  • Plate, serve and enjoy!!!
